Tropfest is the worlds largest short film festival and Sydney, Australia plays host to this wonderful event.

Pre-entertainment including live music begins at 3pm with food and drinks available for purchase.

For all of you film lovers the much anticipated world premiere of 16 incredible short films begins  at 7:30pm

Take your Valentine for a romantic picnic and evening of food, wine and film.

Christmas Picnic Salad: Prawns and Peach

Prawn and Peach Picnic Salad

Surprise your guests with this Christmas picnic salad which is festive, healthy and delicious. If you are planning a picnic during the holidays this prawn and peach salad is in season, simple to make and will please the crowds!  If you have leftover prawns from Christmas day this is quiet a handy recipe to have on hand.

INGREDIENTS

Turkish bread roll, 1, 1cm cubes
olive oil, 2 tablespoons
baby rocket and spinach
leaf mix, 100g
cooked prawns, 250g, peeled, deveined, tails on
peaches, 2, halved, stoned, sliced
bocconcini, 100g, drained, torn
red onion, 1, thinly sliced
mint leaves, 1 cup

DRESSING
extra-virgin olive oil, 2 tablespoons
red-wine vinegar, 1 tablespoon
Dijon mustard, 2 teaspoons

METHOD

  1. Preheat oven to moderate, 180C. Line an oven tray with baking paper.
  2. Toss bread with oil. Season. Spread on tray. Bake 8-10 minutes, until golden. Cool.
  3. On a large serving platter, combine leaves, croutons, prawns, peach, bocconcini, onion and mint, tossing gently.
  4. DRESSING Whisk all ingredients together. Season.
  5. Drizzle dressing over salad just before serving

TOP TIPS

  • Crispy prosciutto broken over the salad is a delicious addition.

Amazing picnic blanket locations are are hard to come by but we have found  Darlington Parklands (Logan City) which has been dubbed a “super park” It’s a great place to play, explore and of course picnic. It has everything from bbq’s, sand pits, musical walls to a 30 metre twin flying fox, and water play area. There are even daily light shows via LED light poles in the park! Believe me, the whole family will entertained. This super park opened in 2014 and is about a 35 minute drive South from Brisbane. Make sure to visit if you are in the area.

Pack your picnic rug for Seaside fun at Barangaroo ~

Barangaroo Reserve is Sydney’s new foreshore park and is home to three giant picnic celebrations this Spring so pack your picnic rug and head on down to spend a day by the sea.

The six-hectare Harbour foreshore park, Barangaroo Reserve, will host these three picnic celebrations. each with a different theme which honours its history – stone, sea and sky.

This will be the first time in 100 years that the waterfront site has been open to the public.

The October Giant Picnic on Sunday, 4 October (Sea theme:  11.00am-5.00pm)

The day includes  roving musicians, soap-box storytellers, kids’ workshops, live music and guest chefs for delicious picnic food to enjoy.

On Sunday, 1 November (Sky theme:  11.00am-5.00pm)

Spend the day enjoying Sydney performers , listening to upbeat rhythms and lifting lullabies. The kids will celebrate with activities and workshops.

Pack the sunscreen and your picnic rug and enjoy a day of culture and activities.

Picnic Rug Recipe Garlic Prawn Baguettes

Picnic Rug Recipes ~ Garlic Prawn Baguettes :

If you are like me and always looking for a simple but tasty treat to lay out on your picnic rug then try these crusty rolls which are filled with fresh basil, mustardy rocket and fresh plump, pink prawns. They are guaranteed to please.

Ingredients (Serves 6)

2 x 60cm sesame seed baguettes (French bread sticks)

Butter, to spread

1 x 120g pkt baby rocket leaves

1/2 cup fresh basil leaves

600g large cooked prawns, peeled, deveined

1 lime, halved

125ml (1/2 cup) Cafe Dip aioli with lime

Method

Cut the baguettes into 3 even portions. Make a lengthways cut in the side of each baguette (do not cut all the way through). Spread the inside of each baguette with butter.

Divide the rocket, basil and prawns among the baguettes. Use kitchen string to tie at 3cm intervals to secure filling.

Squeeze the lime evenly over the baguettes. Drizzle over the aioli to serve.
Notes: Make this recipe to the end of step 2 up to 1 hour ahead. To transport, wrap baguettes in plastic wrap or non-stick baking paper and place in an airtight container. Store in an esky. Continue from step 3 at the picnic.

Superhero Picnic Party

A picnic party of the superhero variety was the theme for my sons 4th birthday this year and the kids loved it!

We themed it by making tasty treats such as batman cookies and superhero lollipops.

The boys used our picnic blanket for lunchtime but also decided that it made a good “base” for the superhero squad to be safe from the bad guys. Each child had a balloon sword and we had games where the kids had to jump on the trampoline like Superman, shoot at paper bad guys with silly string guns and pop black balloon bombs with their feet.

It was great to be outdoors and made for a mess free lunchtime!

Picnic rug savoury muffins for any occassion. Whether you’re off to Randwick or having a family picnic, put these scrumptious muffins down on your picnic rug and you are sure to be a winner!

Savoury Picnic Muffin Ingredients (Makes 12)

2 cups self-raising flour

80g butter, melted, cooled

1 egg, lightly beaten

1 cup milk

100g feta cheese, crumbled

100g sliced ham, diced

1/3 cup (50g) semi-dried tomatoes, finely chopped

2 tablespoons pitted kalamata olives, chopped

12 small sprigs fresh rosemary

butter, to serve

Method

Preheat oven to 200°C. Lightly grease a 12-hole, 1/3 cup-capacity muffin pan.

Sift flour into a large bowl. Make a well in centre. Pour butter, egg and milk into a jug. Stir to combine. Pour into well. Stir until almost combined. Fold through feta, ham, tomatoes and olives.

Spoon mixture into muffin holes. Insert a rosemary sprig in the top of each muffin. Bake for 20 minutes or until a skewer inserted in the centre comes out clean. Set aside in pan for 1 minute. Turn out onto a wire rack to cool completely. Place muffins in an airtight container. Serve with butter
